Description

Why I suggest Amarone della Valpolicella Classico DOCG Paverno

Good Amarone, less structured and complex than others. I find it a good way to approach in our time. Difficult to believe in the alcoholic strength considering how much this wine is. It is a Wonderfully smooth Amarone that makes you have a second bottle.

The Sommelier: It has a beautiful intense garnet red and noble in the glass, transparent and bright, with a short nail that fades from pink to orange. Intense nose of red fruits, spices and grass. Soft and enveloping on the palate, even if dry instead of sweet, of little body. On the palate identical hints of smell with roasting in the finish. Balanced tannins and acidity; good persistence and extension of the various scents. Dried cherries and currants, ripe berries in general then spicy notes, finally memories of leather and tobacco: the olfactory bouquet is rich and complex. Elegant is the drink, powerful, warm and balanced. Long persistence.

Recommended pairings: Excellent Amarone della Valpolicella Classico DOCG Paverno 2018 Vaona with pheasant with walnuts and truffle; pork fillet, pasta and beans; Amarone risotto and fresh pasta with duck ragù, Troccoli and cuttlefish stuffed with spicy sauce; Florentine-style Chianina steak; Seared tuna in a pan; Seasoned Taleggio cheeses, Pecorino, Parmigiano Reggiano and sweet cured meats.

Uncork and decant Amarone della Valpolicella Classico DOCG Paverno Vaona before serving at a temperature of 18-20 ° C, in a large Ballon glass.

Wine Cellar: Country that goes, popolar traditions, to these the task of maintaining the status of which boasts the denomination Valpolicella DOC...go to the card
