Why I suggest Rupicolo Castel del Monte DOC
Native vines contribute to the DOC Rosso Castel del Monte Rupicolo. Nero Troia, Cabernet Sauvignon and other indigenous grape varieties are very balanced wines, and always surprise for their innate freshness. Light, young and fragrant wine that does not tire, from the olfactory side of medium intensity, medium complexity and persistence, indicated to drink on ordinary dishes and not always obvious.
The Sommelier: In the limpid and brilliant glass, bright ruby red color, good visible consistency to the rotation of the wine in the glass. At the initial vinous nasal impact, then aromas of cherry and almond at the pre-harvest (woody) stage, like a memory of pomegranate, roasted coffee.
Taste to the taste: clean, dry, with the presence of two grapes two sensations in one: soft and hard, well balanced with good freshness and moderate tannins. On the palate it shows thickness and reserves a fairly persistent finish
Recommended pairings: Tasty dishes, fish cooked in every way: Cardoncelli mushrooms and baked potatoes; vegetable omelettes; fried snails; vegetable soup Cardoncelle and lamb, semi-hard and seasoned cheeses with various cold cuts; Vegetables and vegetables in EVO oil; dried fruit.
Uncork and serve at a temperature between 15 - 16 ° C, in a Burgundy glass.
Wine Cellar: Rivera Winery ... long centuries have passed and lists of selection of varietal clones, have led to the affirmation of the great Apulian oenological potential with black grapes: Nero di Troia ...
