Variety of Olives: Favarol 60%, Grignano 30%, Leccino, Canino, Taggiasca olives, Weeping 10%

Ideal pairing: best enjoyed raw on salads and cooked vegetables, soups, fish and meat

Cultivation: varieties Favarol, Grignano, Crying, Leccino, Canino and Taggiasca, of variable age from a minimum of 35 years to more than 2 centuries. The plants are bred with the classic system, with cover crops total, without irrigation and with pruning and organic fertilization annual. Hand-picked in the 1st decade of November in the phase of ripening

Pressing: pressing at the end of the day, continuous extraction cold. Yield variable from vintage to vintage from min. 15 q/ha in max. 60 q/ha, with yields of oil ranging from 8 to 13%

Visual analysis: color green with yellow reflections and the soft-density, well-balanced, rightly fluid

Olfactory analysis: scents of herbs and flowers, artichoke, potato

Taste analysis: fresh, fruity, slightly spicy, expresses flavors of crunchy vegetables freshly picked, musk and flowers of the field. Persistent, enveloping, excellent flavor enhancer for food
