Why I suggest Pecorino Aries Colline Pescaresi IGT 2021
Drunk and I have a pleasant memory. One of my favorite wines of this company, fruity and clean, structured palate, characteristic of the vine. Combined with challenging fish dishes it is really good.
Sommelier:
White of the tip of Chiara Ciavolich's wine cellar that already at the sight, with its golden yellow, gives a glimpse of a beautiful complexity due also to the aging in French oak barrels. On the nose it begins with a field of white and yellow flowers and then moves on to citrus scents. On the palate it amazes for its remarkable balance between freshness, flavor and alcohol that alternate with a sweetish, almondy aftertaste.
Recommended pairings:
Appetizers: battered eggplant flowers; taralli pugliesi, olives the beauty of Cerignola. Fried artichokes, stewed, roasted, with pasta.Rombo with potatoes. Dishes with intense flavors, tubetti with monkfish, spaghetti and Tarantine mussels, peppered with mussels, grilled prawns; fresh cheeses, fresh and dried fruit.
