Why I suggest Pecorino Aries
I drank and I have a pleasant memory. One of my favorite wines of this company, fruity and clean hints, structured palate, characteristic of the grape. Combined with demanding fish dishes, it is really excellent.
The Sommelier: Top white from Chiara Ciavolich's cellar, which already at the sight, with its golden yellow, reveals a beautiful complexity also due to the aging in French oak barrels. The nose starts with a field of white and yellow flowers and then goes on to citrus scents. On the palate it amazes for its remarkable balance between freshness, flavor and alcohol that alternate with a sweet, almondy aftertaste.
Suggested pairings: Appetizers: battered eggplant flowers; Apulian taralli, olives the beauty of Cerignola. Fried artichokes, stewed, roasted, with pasta. Rum with potatoes. Dishes with intense flavors, tubes with monkfish, spaghetti and mussels from Taranto, peppered mussels, grilled prawns; fresh cheeses, fresh and dried fruit.
Uncork and serve at 10-12 ° C in a Renano glass.
