Why I suggest Raboso Piave DOC 2011
Grown in the Veneto region in the flat valley of the Piave, must maybe the name of the reaction of rage and resentment at the impact of very acid and astringent on the palate, the grape and the wine. The thick skins provide a good resistance to diseases and rot. Winemaking is careful and soft, and the Raboso could be the answer of the Veneto Nebbiolo or Sangiovese.
The Sommelier: Vinified from sun-grapes of Raboso Piave DOC, its long ripening can be harvested at a late stage, obtaining a wine withintense ruby red color and garnet reflections. Clear wine, brilliant and consistente with 13,50% vol. A bouquet vinous, pleasant notes of cherry, maturing, ripe fruit. The taste is austere, well-balanced, full-bodied, velvety with ageing, persistent to the end.
Food pairings:Excellent on Polenta, Tortellini and meat sauce, Rabbit cacciatore, baked Arista of pork, wild game, Troccoli hand-made with lamb sauce, cheese and medium cheese.
Uncork and allow to aerate before serving at a temperature of 16 - 18 °C. in the cup Ballon great.
