Why I suggest Barbera d’Asti DOCG
The value of World Heritage is attributed to the Monferrato winegrowing landscapes by UNESCO. The geographical position is breathtaking, in the background the Monviso, a high hill area ‘’ bric ’’ on which the vineyards master and make an original design.
In this artistic context the Bricco dei Guazzi with thirty-five hectares of vineyards, meets the native, the clone being studied by Dr. Dal Masso, ampelographer in the Asti area. He realized that he could cross two clones of the Barbera and Nebbiolo, bringing together the characteristics of both, he managed to overcome some critical aspects that still affect the wine of each one today.
The Sommelier: This Barbera is very interesting, it stands out from the usual angular wines of the type. Intense dark red wine, almost black. After an hour free a broad olfactory picture, lots of ripe red fruit, plum, berries, raisins, decidedly vinous imprint. They enrich a marked spiciness, hints of leather and undergrowth, animal and wild scents, as well as blood / iron. On the palate it is warm, dry, round, balanced in the soft and tannic components. Long finish.
Recommended pairings: Wine for the whole meal: with red meats and vegetable first courses with bacon and croutons, pork in cabbage stew; Horse meat chops better if spicy; Donkey stew, good with the Neapolitan casatiello.
Uncork and decant before serving at a temperature of 16-18 ° C, in Ballon goblet.
Winery: ... the art of making wine is acquired from the past and is constantly updated without being content to repeat it.
