Valpolicella is characterized by a favorable climatic trend with optimal temperatures for the development of the cultivation of the Corvina and Rondinella varieties. The temperature changes at the time of veraison determined an increase in the sugar content, favoring the maintenance of the acidity and facilitating the development of the aromatic profile of the varietals.
